Chickpea (Besan) flour
Chickpea Flour is sometimes referred to as gram, garbanzo or besan. It’s widely used in Mediterranean, Mexican, Indian and Asian cooking. Domesticated in the Fertile Crescent around 7,000BC, chickpeas then spread to the Mediterranean region around 6,000BC, and to India around 3,000BC.
Naturually gluten-free and protein packed, chickpea flour makes excellent fritters. It helps to bind burgers and koftas. Makes an incredibly light batter - try it mixed with spices and soda water for create an easy tempura-like texture. The flour can also be used to thicken sauces and soups.
It works well in breads, cakes and biscuits - especially if paired with lighter flours, ground almonds or starches like tapioca or cornflour.
